Reviews: 14Total Time: 20 mins1. Line a cookie sheet (or two) with waxed paper.
    2. In a microwave-safe bowl, carefully heat the butterscotch chips until they are melted. (I generally microwave for 30 seconds, then stir. And then continue heating/stirring in 10-20 second intervals until the chips are melted. Be careful that they do not burn!)
    3. Then stir in the peanut butter, and mix until it is melted and the mixture is smooth. Add the chow mein noodles and marshmallows and continue stirring until everything is evenly coated.
    4. Drop by spoonfuls onto the waxed paper. Let cool until they are hardened.

Total Time: 20 minsCategory: DessertCalories: 161 per serving1. Prepare two sheet pans with parchment paper (to transfer easily to the refrigerator later), or place a sheet parchment paper on your counter top before beginning.
    2. In a microwave safe bowl, add butterscotch chips and peanut butter. Microwave in 30 second increments, stirring until melted and smooth. Alternatively, melt over a double boiler on the stove top.
    3. In a separate bowl, combine chow mein noodles and coconut flakes. Add butterscotch mixture and stir until evenly coated.
    4. Working quickly (your mixture will solidify within about 10 minutes), spoon mixture in heaping mounds on your prepared parchment paper (about 2-3 tablespoons per mound). Form into a round shape and hollow out the center to make space for your eggs. Top each mound with 2 to 3 eggs while butterscotch is still wet.
