1. Combine the flour, brown sugar, buttermilk, and starter in a large mixing bowl by mixing until a sticky dough is formed. Cover with a clean tea towel and allow to rest on the counter about 30 minutes.
2. Add the salt and knead by hand, either on the counter or right in the bowl, abbout five minutes, until the salt is thoroughly incorporated and the dough begins to smooth out. It will still be relatively sticky and shaggy.
3. Cover with a damp towel and allow to rise in a warm place for 4 hours, or until doubled in size. Once or twice during the rising process, fold the dough back up into a ball to help build structure and help it rise higher in the second rise. If needed, re-dampen the tea towel to keep it from drying out.
4. Turn the dough out onto a clean surface and stretch into a long rectangle about 9 inches x 18 inches. Tuck the corners in and start rolling the dough into a log. Tuck the ends under and pinch the side and bottom seams. Place the the loaf into a greased loaf pan and cover with greased plastic wrap.

1. Take the buttermilk out of the fridge and let it warm up for about an hour. If you need to speed warm it, you can put the buttermilk in a small bowl and set the bowl inside a larger bowl. Add warm water to surround the small bowl and let sit for 30 minutes.
2. You'll need a large glass bowl to rise the dough. I use this 2.5 quart pyrex bowl because it gives the dough enough room to rise. If you are making two loaves, you'll need 2 large bowls to rise the doughs.
3. Take the dough out of the mixing bowl and shape and add to the rising bowl.
4. Once the dough has doubled in size, remove from the bowl to the counter or cutting board.
