Reviews: 4Category: Carnivore, Main Dishes, MediterraneanServings: 2Total Time: 25 mins1. In a saucepan, melt the butter and add olive oil. Add finely chopped onion and stir. Add salt and wait till it gets translucent. Add the meat and keep stirring. If you use lamb or veal you don't need more than 2 minutes, but if you use beef you'll need at least 5 minutes. Add a couple of tablespoons of water.
2. Now add 6 yolks, pepper and paprika powder. Mix energetically and remove from heat.
3. Whisk 8 egg whites with 2 yolks as if you were preparing an omelette. Add spices and make sure the mixture is homogenous but without too many bubbles.
4. Cook 2 large crepes out of this mixture. Ideally, you will use an electric crepe maker but if you don't have it, make sure your pan is wide enough. You can grease the pan with some coconut oil or butter to prevent crepes from sticking. It's important to make them as thin as possible. Set them aside to cool down a bit.

Frequently Asked Questions

What is turkish borek and how do you eat it?

Turkish borek is available both as a strudel or casserole and in "cigar form". The latter is what this borek recipe is all about. The rolls can be eaten wonderfully out of hand and served as finger food. One of the classics is just borek with spinach and/or feta cheese. Either as borek with fresh spinach or with defrosted frozen spinach.

What are the fillings for turkish borek?

There are many fillings for Turkish borek including lamb mince, ground beef, feta cheese and herbs, and spinach. In this article we’ve included two traditional borek recipes, one with spinach (Ispanak) and the other with ground beef (kiyma).

What is burek and how do you cook it?

Burek can be prepared in a large pan and cut into pieces after it’s baked, or it can be prepared as an individual pastry (in smaller portions). The pastry is usually prepared by baking but some variations can be fried too (more about this later). Before serving, burek is often sprinkled with sesame or nigella seeds.

What is israeli bourekas made of?

Israeli bourekas: mashed potato stuffed and seed-topped, Israeli bourekas is made with margarine instead of butter, to get around the no-milk-and-meat kosher rules. I tried to make this delicacy, and the process was too easy cheating, too hard the hard way.
