1. Add the vinegar, sugar, and vanilla to a saucepan set over medium heat. Bring to a boil, then simmer until reduced by about half and thick enough to coat the back of a spoon (about 10 minutes). Remove from heat and stir in the black pepper.
2. Lightly coat the lamb chops with olive oil. Sprinkle with rosemary and sea salt. Place in a single layer on a broiling pan. Broil under high heat for 5 minutes on each side.
3. Brush the lamb chops with the vanilla balsamic glaze. Serve with remaining glaze. Sprinkle with pomegranate seeds, if desired.

1. Clean your lamb chops and trim any fat from edges, if needed. Place lamb chops in large glass plate or container.

3. Process until well combined. Then slowly add in your oil and salt pepper while processing on low. The marinade should result in a thick sauce with small pieces of herbs still in it. See pictures in blog post.
4. Next, marinate the lamb chops in half of the mint chimichurri sauce marinade for 1 hr to 24 hours. Save the other half for serving.
