1. Cut cake into 2-inch-thick slices and cut slices into rectangles or strips.
2. If you are using fresh fruit, you can either mash up a cup to generate some juices and spread that or some jam on your cake strips. Frozen fruit will generate lots of juice as they melt.
3. Arrange half the cake, jam-side up, in the bottom of a 12-cup serving bowl. If you use a glass bowl or trifle bowl you get extra points for presentation. I have used square glass vases in the past.
4. Arrange half the fruit over the cake layer and spoon half the custard over the fruit.

1. In a medium-sized bowl, whisk together the egg yolks, sugar and cornstarch until the mixture is smooth.
2. Heat the milk, cream and vanilla in a small saucepan just until bubbles form along the edges of the pan.
3. Remove 1/2 cup of the hot cream and whisk it into the egg mixture, whisking constantly. Gradually pour the egg yolk mixture back into the saucepan with the rest of the cream mixture, whisking constantly to prevent clumping. Continue to cook, whisking constantly, until the mixture leaves a path on the back of spoon when you draw your finger across it. DO NOT BOIL.
4. Cover and chill. Can be made a day in advance.

1. Warm the milk, cream and vanilla in a small pan over a low heat until it is just about to simmer (If you are using a pod, you may like to slit it open to let some of the seeds into the sauce). Remove from heat and remove the vanilla pod, if you used a pod.
2. While the milk is heating, whisk together the egg yolks, sugar and corn starch (if using) in a medium bowl until they are well combined - it should go a pale yellow color and be almost glassy-looking.
3. Gradually add a little of the warm milk at a time to the yolk mixture, whisking so they are combined, until it has all been added.
4. Transfer the mixture back to the pan and warm over a low heat, stirring regularly with a wooden spoon/spatula, until it thickens up. It should just coat the back of the spoon as you take it out the mixture.
