Place the brisket in a large bowl and cover the top and bottom with ⅔rds of the onion mixture. Place brisket, fat side up, in the slow cooker. Spread the dijon mustard over the top of the brisket and sprinkle the remaining ⅓rd of onion mixture over the top. Set slow cooker on low for 9 hours.
You definitely can overcook brisket in the slow cooker, so we highly recommend two tips to ensure your brisket is perfectly cooked: cook low and slow, and keep an eye on it. Make sure your slow cooker is set to low instead of high to avoid overcooking.
Pour the BBQ sauce over top and cook uncovered for about 30 minutes or until the sauce is bubbly and the top of the brisket is caramelizing. Remove from oven and place on a large cutting board. Slice brisket thinly against the grain. I recommend a foil pan for way less cleanup afterwards!
