Add in raw cacao powder.Step6Whisk in water.Step7Once the water reaches just about boil temperature immediately remove from the heat.Step8Turn the mixer on low speed and, while running, slowly pour the hot water down the side of the bowl into the gelatin mixture.Step9Once you have added all of the water, add in vanilla extract and liquid stevia if desired, and increase the speed to medium-high.Step10Beat at medium-high for 1-2 minutes then increase speed to high.Step11Continue to whip until the mixture becomes slightly thick, approximately 8-10 minutes.Step12While the mixture is whipping prepare the pans as follows:Step13We used a bread loaf pan. You can use anything you like. Lightly grease your pan with some coconut oil (which is what we do).     1. Make a bain-marie/double-boiler by fitting a glass, ceramic, or metal bowl over a 6-inch saucepan and adding some water (2inches/5cm). Do not let the bottom of the bowl touch the water and make sure that the fit is loose enough that the steam can escape.
    2. Place the saucepan onto a stovetop and bring the water to simmer.
    3. Add the gelatin, granulated sweetener, and heavy cream to the bowl, stir well, and place it over the saucepan. Wait for the gelatin and sweetener to completely dissolve (about 5 minutes) in the heavy cream, but don’t let the mixture simmer.
    4. When done - using a kitchen towel (the bowl will be very hot) - remove the bowl from the saucepan and set aside to cool a little bit.
