Rinse them thoroughly, and place them in a pot filled with enough water to completely submerge them. Bring the water to a boil, letting it boil for a couple of minutes. Turn off the heat, drain and rinse the pork trotters clean. Pat them dry, and set aside.
2. Heat the oil in a wok or large Dutch oven over medium low heat. Add the ginger, the white parts of the scallion, the star anise, cinnamon, bay leaves, dried hot chili peppers and dried tangerine peel. Let everything infuse for a few minutes, taking care not to let the aromatics burn. Now, carefully add the pork trotters, and brown them on both sides.
3. Time to drain the soybeans. Add the soybeans, along with the rock sugar, dark soy sauce, light soy sauce, Shaoxing wine, and water. Stir thoroughly, and cover. Let the pork trotters braise for 70-80 minutes on low heat until tender. Be sure to stir periodically to prevent sticking. Towards the end of the cooking time, add salt to taste. Don’t prolong the cooking too much. In this case, “falling off the bone” is not what we want.
4. If there is still too much liquid at the end of your cooking time, just turn up the heat and cook off the liquid to the right consistency. You’ll want some thickened sauce at the end. Garnish with the green parts of the scallion, and serve.

3. After releasing pressure naturally, transfer pork feet to a wok (or dutch oven). Transfer pork broth from pressure cooker to wok until it almost covers the pork. Add the rest of the ingredients into wok and turn to high heat. After bringing the broth to a boil, reduce to low heat and simmer covered for 30 minutes. Stir pork feet every 10 minutes to avoid burning on the bottom. Stir more often toward the end of braising, after the sauce has thickened. Add water during the braising process if the broth becomes thick while the pork is still tough. If the pork turns very soft but the sauce is still thin, turn to medium heat and boil uncovered. Reduce sauce until desired thickness.
4. To cook without a pressure cooker, skip step 2 and add boiled pork, water and all ingredients into a wok or a dutch oven. Add water until it covers pork and boil for around 2 hours. If the water level becomes too low while pork is still though, add warm water, 1 to 2 cups at a time, and continue braising.

Bring a fresh pot of water to the boil and repeat this process (this rids the feet of impurities).
2. Wash the pot. Rinse the ginger (no need to peel it) and cut it into large chunks. Put the pieces on a cutting board and lightly crush them with the side of a cleaver. Put the ginger into the pot, then add the garlic. Break the dried chillies in half, shake out and discard the seeds, then put the chillies into the pot. Add the soy sauce, rice wine, cinnamon sticks, star anise, sugar, chun pei and 1 tsp of salt into the pot, along with 600ml (2¼ cups) of water. Bring to a simmer and cook until the sugar is dissolved.
3. Put all the pieces of pig's feet into the pot and bring to the boil. Cover with the lid, turn down the heat and cook at a low simmer, occasionally moving around the pieces of pig's feet so they are submerged in the liquid. After about an hour, add the peanuts.
4. Simmer the ingredients for about three hours in total, or until the pig's feet pieces are very tender. The sauce should reduce to a sticky, light syrupy consistency; if it's too thin, remove the lid when the meat is tender and continue to simmer. Taste the sauce and correct the seasonings, if necessary.
