2. Using a stand mixer, very lightly beat your softened cream cheese until smooth. Do not overbeat, otherwise the cheesecake will crack. Add the flour, vanilla extract, sour cream, and sugar and until just combined. Add the eggs one at a time, and stop beating once smooth. Once smooth, fold through the blueberries using a rubber spatula.
3. Transfer the cheesecake filling into the pie crust and bake for 1 hour and 10 minutes, or until the tops are set and the filling slightly jiggles when touched.
4. Allow the cheesecake to cool completely, before refrigerating overnight.

2. In a mixing bowl, using an electric mixer, mix together all ingredients excluding blueberries until fully-incorporated. Pour mixture into prepared baking pan and, using a rubber spatula, smooth into an even layer. Add blueberries to top of mixture. Transfer pan to oven and bake until crust is golden brown, about 40-45 minutes.
3. After baking, remove pan from oven, loosely cover pan with foil, and transfer pan to refrigerator to chill for at least 4 hours.
4. Using a knife, cut cheesecake into 12 equal-sized bars, remove bars from pan using a spatula, serve, and enjoy!

Microwave 30 more seconds until uniform and gloopy (it should look like cheese fondue at this point). Add the rest of the dough ingredients and the cheese to a food processor. Mix using the dough blade until a uniform color. If you do not have a food processor you can mix in a medium bowl with a wooden spoon but you may need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients. Once it is a uniform color wet your hands and press it out into a 9×12 ish rectangle on a parchment-lined baking sheet.
3. To make the cream cheese filling you can add the cream cheese, vanilla, egg, and sweetener to the food processor (no need to wash) or to the bowl you were using. Mix until smooth in the food processor or with an electric mixer.
4. Put the filling down the center of the dough. Mine was spreading out a bit so I just pushed it back to the middle with a rubber spatula. Sprinkle the blueberries on top. Cut one-inch strips down the edges of the dough as shown in the photo. Crisscross one over the other, braiding as you go down. Bake for 40-45 min until the dough is golden and the cheese filling no longer jiggles.
