1. Preheat oven to 325 and line a large baking sheet with parchment paper. Set aside.
2. In a mixing bowl, whisk together almond flour, peanut flour, coconut flour, baking powder, and Lakanto confectioner's sweetener. Set aside.
3. In a separate mixing bowl, cream together the peanut butter, butter, egg, and vanilla extract. Combine the wet and dry ingredients.
4. Use a cookie scoop to make 1" balls of dough, placed 2" apart on the cookie sheet. Flatten the dough balls, then bake them for 15 minutes. Let cool for 2-3 minutes, then use the back of a teaspoon the make an indentation in the center of each cookie. Move to a wire rack to cool.

4. Bake in preheated oven for 9 to 10 minutes, until the cookies are just slightly browned on the bottom. Be careful not to over-bake as the cookies will continue to cook. After 2 minutes, press chocolate wafer in the middle or sprinkle in 3-5 chocolate chips. Allow to cool completely for the cookies and chocolate to set and harden.
