(I use an instant read thermometer .)
Blackcurrants have enough pectin (the thing that makes jam set) in them that you should be fine with normal sugar. The usual sugar to fruit ratio for jam is 50/50, but this makes for a very sweet finished product – to let the flavour of the fruit come through more, we’ve taken the sugar down a bit.
You don’t need to add any additional pectin or lemon juice in this recipe, just blackcurrants, water, and sugar. Making jam is a family tradition. I can remember picking blackcurrants with my Granny in her garden. She then made Blackcurrant Jam. My Mum is a very accomplished jam maker and I’ve yet to taste anything to better her Raspberry Jam.
One batch yields 8 half-pint jars, but can easily be divided in half. Add the blackcurrants to a thick-bottomed pot and simmer on low for about 10 minutes until they begin to release their juice. Add sugar and lemon juice (if using).
