2. Pour the blackberry syrup through a fine mesh strainer and into a glass container. (At this point you can store this simple syrup in the fridge for a couple of days)
3. To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker. Add in the juice of ½ a lime and a mint leaf. Muddle (that means mush) the mixture together with a muddler or the handle of a wooden spoon. Add in a handful of ice to the shaker and give the mix a shake or two (if you would like to add an ounce of rum, vodka or gin, add it to the glass before shaking).
4. Fill a high ball glass with ice and pour the contents of the shaker in. Top with club soda and enjoy!
