1. In a large mixing bowl whisk together eggs, honey, sugar, and vanilla. Add baking soda, cinnamon, and flour and mix well. Fold in walnuts. Spray a cookie sheet. Roll dough into balls with your hands and flatten with a fork dipped in sugar. (Can sprinkle more sugar over tops).
2. Bake in preheated 350 degree oven 10 to 15 minutes until golden brown on tops. Makes 2 to 3 dozen depending on size you make them
