Total Time: 35 minsCategory: SnackCalories: 929 per serving1. Look over the chokeberries and remove any stems
2. Mix the sugar and pectin. Put the chokeberries and grated ginger in a tall saucepot (you don’t want this splattering around so use a deep, tall saucepot) and add water just so the berries are almost covered.
3. Bring the mixture to a simmer, then transfer to a blender and process until as smooth as possible. If I want a refined puree, I’ll pass it through a chinois strainer to catch the small pieces of skin that may still be in the chokeberry coulis, but at home, I may leave them in for a more rustic look and texture (some people may not care for the texture, so straining is my first choice) If you don’t strain the mixture, you should have about 32 oz (4 cups) of coulis/puree or a little less.
4. Pour the mixture back into the pot, add the pectin-sugar mixture, and bring the mixture to a rolling boil. Continue cooking on high heat until the mixture reaches 225 F on a candy thermometer, or just boil for a couple minutes if you don't have a thermometer--this is a rustic recipe.

Frequently Asked Questions

Are blackberries low carb?

Like other berries, blackberries are considered a low carb fruit. Per 1 cup serving, they yield a mere 4 grams net carbs, even lower than blueberries or strawberries! While delicious on their own, I love using them in a delicious cobbler! I’ve been meaning to share a keto blackberry cobbler recipe for quite some time.

How to make keto friendly blackberry cobbler?

This keto friendly and gluten free blackberry cobbler is bursting with juicy berries and topped off with a simple buttery crumble. Preheat oven to 375 degrees. Add the blackberries, xanthan gum, sweetener, and lemon juice to a bowl and stir well to coat the berries. Transfer to a 12 inch cast iron skillet or 9x9 baking dish.

How do black chokeberries grow?

Black chokeberry produces edible berries in the late summer. Unlike chokecherries which grow in bunches similar to grapes, chokeberries grow individually. Each berry grows on its own individual stem, but they’ll often grow in clusters of 2-20 berries. The berries themselves have a dry feel to their outsides and are a bit wrinkled.

Is black chokeberry the same as chokecherry?

Black Chokeberry ( Aronia melanocarpa) is native to the Eastern half of the US and Canada ( map here ), and though the name sounds similar to chokecherry, they’re completely different plants. In urban areas, they’re common in landscape plantings, and our local Trader Joes grows in ditches throughout the parking lot.
