1. Rinse the beans under cool running water using a colander. Pick out and remove any odd shaped beans.
2. Place the black beans in the bowl of the instant pot, add the onions, garlic, cumin, jalapeno (if using), bay leaves, salt, pepper and finish with the liquids.
3. Manually set the Instant Pot to HIGH pressure for 35 minutes, close the vent to SEAL. Once done, let the pressure cooker steam vent naturally for about 25 minutes.
4. Taste the beans, adding as much lime juice, salt and pepper as you like.

3. Remove the bay leaf. If you want a thicker creamier soup, use an immersion blender to purée some of the soup for a thicker consistency but don’t blend it completely. If you don’t have an immersion blender, carefully transfer 2 to 3 cups of the soup to a blender and blend until smooth. Stir the pureed soup back into the pot.
4. Ladle the soup into bowls and serve warm with desired toppings.
