1. Preheat oven to 425F.
2. Heat a large skillet over medium-high heat. Add ground meat and half the onions to the pan, sauteing until meat is browned. Remove, drain if necessary, and set aside.
3. Coat pan with olive. Add remaining onion, pepper, and jalapeno, sauteing for 4 minutes; stirring occasionally. Add salt, cumin, red pepper, and garlic. Saute for 1 minute, stirring constantly (I added a tablespoon or two of water to keep things from sticking in the pan.)
4. Stir in broth and black soy beans. Bring mixture to a boil and cook for 5-10 minutes. Mash beans to desired consistency.

1. Add the oil to the saucepan and heat over medium heat. Add the diced veggies and sauté for about 5 minutes. Be careful not to let the garlic burn.
2. Add in the two cans of black soy beans (do not drain or rinse). Mix in the seasonings and then add the bay leaves.
3. Allow the mixture to simmer over low heat for as long as possible to develop the flavors (I like a solid 30-45 minutes if possible).
4. Before serving, remove the bay leaves and stir in the vinegar. Serve over your favorite rice substitute (if low carb), see the post above for tips on cooking cauliflower rice!
