Bhindi Masala is a semi gravy side dish from Punjab made with sautéed bhindi (okra) cooked in a spicy masala that goes very well with chapatis, rotis or phulka. This is one of my favorite recipe using bhindi as you cannot feel the sliminess of the vegetable in any way.
While the bhindi is getting cooked keep 1/2 cup chopped onions, 1/2 cup chopped tomatoes, 1 teaspoon minced ginger garlic or paste ready. To the same pan add 1 more tablespoon oil. Once it is hot add 1 teaspoon mustard seeds, add cumin seeds, 1 slit green chili and saute for a minute.

Heat oil in a kadai and add cumin seeds and when it starts spluttering add sliced onions and sauté for a minute. Add the bhindi and salt. Mix well and with partly covered lid let the bhindi cook. Do not cover fully otherwise the bhindi will get sticky.
