1. Preheat a large pot or sauté pan over medium-low heat. Add the tahini/cashew butter to the pan, then the garlic. Stir to combine, mashing the garlic into the pan with the back of a spoon. After a minute, add a splash or two of water to thin the mixture. Stir and cook for another 2 to 3 minutes. Transfer the garlic mixture to a high speed blender and set aside.
2. Spread the cauliflower evenly in the same pan used to sauté the garlic. Sprinkle with a pinch of salt and add water for steaming, about half inch deep. Steam the cauliflower until tender, 5 to 7 minutes. Transfer the cauliflower to the blender and discard the cooking water.
3. To the blender add the remaining sauce ingredients: 1 cup water, nuts, lemon juice, nutritional yeast, salt, onion powder, mustard powder, and pepper. Blend until completely smooth. Taste and adjust seasonings.
4. Cook pasta according to package directions. Drain pasta in a colander, and pour the alfredo sauce into the pot. Cook over medium-low heat for about 2 minutes, just until heated through. Return the pasta to the pot and stir to coat.

Cook for 2 minutes.
4. Transfer to a blender and add salt, pepper, vegan parmesan cheese, nutritional yeast, garlic powder, and blend on high until creamy and smooth, scraping down sides as needed. Taste and adjust seasonings as needed - you want it to be pretty cheesy and salty so don't be shy.

Start out by adding JUST 1/2 cup more of the remaining broth and add the remaining ingredients (salt, pepper, cashews, starting with JUST 1/2 tablespoon lemon juice, nutritional yeast-starting with just 2 tablespoons yeast). Blend on high for a couple of minutes until very creamy and smooth. Add any more broth to reach desired consistency, if necessary. I did not. If you don't add more broth, you would likely not need any more yeast. Taste and add any more salt & pepper or lemon, if desired.
3. Serve over preferred pasta. Note: When preparing your pasta, make sure to salt your water well, so your pasta has flavor and isn't bland, which can affect the end flavor result of the dish. I add around a tablespoon to a large pot of boiling water. Garnish with parsley, lemon zest and salt & pepper, if desired. Add any veggies you like. I like to add broccoli or even peas. Store leftovers in the fridge. The sauce will thicken up even more overnight, which you can thin out a little with a touch of broth when reheating, if necessary.
