Loosely drain the cooked noodles from water. We use egg noodles in our kugel recipe but feel free to use other types and shapes of noodles or pasta.
Add a cup of golden raisins or other dried fruits into the kugel mixture for a sweeter note. Make sure to boil the noodles in salted water. Even if this is a sweet recipe, this helps to add flavor to the kugel and also reduces stickiness.
Whisk together the remaining tablespoon of sugar and 1/4 teaspoon cinnamon; sprinkle over the top of the kugel. Bake the kugel for about 1 hour until the center of the kugel is set and the tips of the noodles turn golden brown. Remove from the oven and let the kugel rest for 15-20 minutes before slicing.
