1. We start this recipe by finely chopping the parsley and the garlic. Then in a large pot, bring 3 to 4 litres (1 gallon) of water to boil. Then when the water boils add the coarse sea salt.
2. Cook the pasta in the boiling water for the time that's on the package minus 4 minutes. We cook it less than instructed because we finish cooking it in the pan with the sauce to have a tastier and creamier dish.
3. While the pasta cooks, you can start making the sauce. Add the olive oil to a non stick or stainless steel pan on low heat. When the oil is warm, add the finely chopped garlic. Let fry in the oil for about 1 minute. Make sure your heat is on low and the oil doesn't get too hot. You don't want to burn the oil, nor the garlic.
4. Turn the fire off, then add the chili flakes. Let fry with the garlic with the residual heat of the pan.

1. Bring a large pot of generously salted water to boil. Cook pasta according to package instructions for al dente. Drain pasta in colander. Transfer pasta back into the empty pot and toss with 3 TB olive oil; cover and set aside.
2. While spaghetti is cooking, heat 1 TB olive oil in large skillet until oil is hot. Add garlic and onion, stirring until aromatic and browned, 2-3 minutes. Add garlic mixture to the pot of cooked spaghetti and stir to combine well. Add broth to loosen pasta as needed. Add parsley and parmesan cheese, tossing until well coated. Add kosher salt and freshly ground black pepper to taste.
3. If using, sprinkle with desired amount of red pepper flakes and serve with fresh lemon wedges and extra parmesan cheese.
