2. Using a spatula mix and break down the tamarind paste continuously for about 5 – 10 minutes, adding 1/4 cup water every 1 to 2 minutes until it turns into a smooth sauce. Be careful that it doesn’t splatter.
3. When ready, turn off the stove, remove the pot and immediately strain it through a sieve using a heat proof bowl. If using a small sieve, split it in portions at a time that is a workable size (I split the tamarind mixture in three portions for straining through a sieve). Cover and set aside.
4. Next in the same pot (no need to wash the pot), melt the butter on medium-low heat, add salt, pepper and Worcestershire sauce. Mix and let it simmer for 1 to 2 minutes.

4. Finally, sprinkle some xanthan gum over the sauce, and give it a final whizz. This will immediately thicken up the sauce - no cooking required.
