Pastrami Rub: 1 cup black peppercorns. 3/4 cup coriander seeds. 1/4 cup juniper berries. 1 cup kosher salt. 1 cup light brown sugar. 2 tablespoons red chile flakes. 2 tablespoons granulated garlic
We have pastrami! Let the pastrami cool for approx. 20 mins, then slice thinly and serve. If for sandwiches, use as is. If for a main dish, put several slices of the pastrami on a plate, and ladle over a couple tablespoons of the juices.
This homemade pastrami recipe is complex and smoky, but not in the way that other smoked meats are smoky. The smoke in this beef pastrami is not overt. It is blended in thoroughly.
Cut it by hand in thin slices, about 1/8" thick, perpendicular to the grain. If you cut parallel to the grain it will be much chewier. Don't try to slice it with a machine. It will just fall apart. Serve. I serve the homemade smoked pastrami on fresh untoasted rye bread. A good brown mustard on both slices is all it needs.
