Apr 17, 2020 - A keto lime curd tart made with a buttery coconut flour pastry is an easy recipe to enjoy. A great blend of sharp and sweet for dessert.
When life gives you a bunch of limes, make lime curd! Use it as a cake filling, or any other way you desire. Place sugar, lime juice, butter, and lime zest in the top of a double boiler; stir over medium-high heat until butter melts. Temper eggs by mixing 2 tablespoons hot lime mixture into eggs, stir to blend.
To get the nice tart zing in this low carb lemon curd, make sure to use tart lemons like Eureka or Lisbon not Meyer lemons, which are much sweeter and less acidic. If you taste this and find that it is a little too tart for your liking, balance the tartness out by using a little more low carb sweetener.
Whisk the whole eggs and yolks in a small bowl, then whisk into the lime mixture. Cook the mixture over medium heat, whisking constantly, until it¿s thick like pudding, 6 to 8 minutes. Remove from the heat and whisk in the butter a few pieces at a time until incorporated.
Temper eggs by mixing 2 tablespoons hot lime mixture into eggs, stir to blend. Reduce heat to medium until water simmers. Slowly whisk egg mixture into the lime mixture. Cook over the double boiler until lime mixture thickens and coats the back of a wooden spoon, 20 to 25 minutes.
