1. Spray a large casserole pan with low calorie cooking spray and place over a medium-high heat. Gradually cook all the lamb in batches for 3-4 minutes each batch until it is all browned. Set aside on a piece of kitchen paper to ensure no extra liquid.
2. Wipe out the pan to remove any fat or water which is left over from the batch frying. Reduce heat to medium and spray again with low calorie cooking spray. Add the onions and fry for 10-12 minutes stirring frequently until soft and golden.
3. Add the ginger, garlic, cardamon, star anise, cinnamon sticks, cloves and chilli powder. Fry for a further 2-3 minutes.
4. Stir in the tomatoes, tomato puree, stock and season well.

3. Then, add lamb to the marinade and set it aside to marinate for an hour on the counter or in the fridge overnight.Tip - always use glass or stainless steel to marinate. Do not use aluminum as it can oxidize with the acid in the marinade. Avoid plastic as it can get stained from the spices.
4. Whole spice - Add the spices to a mortar and pestle. Lightly pound to crush them – you want the cardamoms to open and the cinnamon a bit smaller.Tip - you can open the cardamom with a knife and leave the cinnamon whole if you don't want the flavor to be too strong. Alternatively, you can use 1/2 tsp garam masala at the end of the cooking in the recipe.
