While brewer’s yeast has a bitter edge on its own, it melds seamlessly into each bite thanks to cinnamon, dark chocolate chips or chunks, shredded coconut, and dried figs. While few medical studies exist to support the claim that eating lactation cookies can increase breast milk supply, there is anecdotal evidence.
If you want to make these lactation cookies gluten-free, you can substitute the all-purpose flour for gluten-free flour, such as Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. You can also use rolled oats that are labeled “gluten-free,” Cream butter, melted coconut oil, and brown sugar in the bowl of a stand mixer or large bowl with a hand mixer.
