1. Heat the oil in a frying pan and add the onion. Cook on low for 2-3 minutes until the onions has softened and then allow to cool.
2. Put the onions in a food processor with the rest of the ingredients and pulse. You can pulse until smooth, or leave a few chunks in it.
3. Form the mixture in to 12 patties and put on a baking tray lined with baking paper.
4. Brush with olive oil and bake in a preheated oven at 200°C/400°F/Gas 6 for 30 minutes.
