Total Time: 3 hrs 30 minsCategory: Main CourseCalories: 416 per serving1. Preheat oven to 425°F. Cut up chicken thighs into small bite sized pieces. Place in a small bowl and toss with Cajun seasoning and olive oil. Place on a sheet pan lined with foil andplace in oven for 20-25 minutes.
2. While the chicken is cooking, dice up the celery, jalapeño and bell pepper. Place them all in one bowl. It is important to cut and prepare the veggies before making roux so you have these ingredients ready to go.
3. In a large heavy bottomed pot (preferably a Dutch oven), over medium-low, add in grapeseed oil and get the oil warm (~1-2 minutes on the stove). Then, slowly whisk in flour to combine. Switch to a wooden spoon and stir continuously for 15-20 minutes (without burning) until roux becomes a dark brown color (think chocolate). DO NOT WALK AWAY FROM STOVE. Roux can easily burn.
4. Remove chicken from the oven and set aside. When roux reaches desired color, add in celery, jalapeño, onion, and pepper into roux. Continuously stir until vegetables are soft and tender ( ~ 7-10 minutes). Add in garlic.

Frequently Asked Questions

Is roux low carb?

The roux is deep, dark, and rich but isn’t made with all-purpose flour. It’s Whole30, paleo, and low carb, but you would never know it! The seafood gumbo is loaded with sausage, shrimp, crabmeat, tomatoes, and okra, making it super hearty. It goes beautifully over a bit of steamed cauliflower rice or regular white rice.

Can you make a low carb gumbo?

Traditional gumbo is made by cooking down a deep, golden, richly flavored roux of flour and oil. So that definitely wasn’t going to be the case for my attempt at a low-carb gumbo.

How do you thicken gumbo on keto?

Sprinkle your keto gumbo soup with file powder and stir until thickened. TIP: File should be added at the end and thickens as it sits. Don’t add during cooking or boiling, this will make the gumbo stringy and too thick. How many carbs in gumbo? Most gumbos will have about 20 grams net carbs per serving, but it will of course vary recipe to recipe.

What color should a gumbo roux be?

Ideally and traditionally a Gumbo Roux must be dark brown color resembling chocolate. How to make roux with oil? Roux with oil is made by cooking white flour with oil over low heat stirring continuously until the desired color is achieved.
