2. Warm the flour tortillas to make them pliable. Mix the rice and beans together and spread equally onto the center of each tortilla. Divide the meat equally on top of the bean mixture. Top with half the cheese.
3. Fold in the sides of the burrito and roll it tightly.
4. Pour half the enchilada sauce into an 8x8" baking dish. Place the rolled burritos seam-side down in the baking dish. Pour the remaining sauce over the top. Bake for 10 minutes. Remove from oven and sprinkle on the remaining cheese. Continue cooking for 3-5 minutes, until the cheese is melted.

3. In a medium saucepan, heat the butter over medium heat until melted. Whisk in the flour and cook until lighly browned. Add in the chicken broth and can of green chili enchilada sauce. Bring to a simmer and cook for two minutes. Pour green chili sauce over the burritos and sprinkle on the remaining cup of cheese.
4. Cover baking dish with foil and bake for 30 mintues. Remove foil and bake for 15 mintues. Let sit for five minutes before serving.
