3. Heat a wok over the highest heat possible and add two teaspoons of canola oil and once smoking hot, add half the beef and cook for a few minutes on both sides. Remove to a large bowl and repeat for second half of beef, again adding to the bowl.
4. Add two more teaspoons of oil and once hot, add the mushrooms and stir fry two minutes. Add the scallions and garlic and cook for one more minute then add to the bowl with the beef.
