1. Preheat the oven to 170C Fan. Lightly grease a baking tray using the cooking oil spray.
2. Place the apples, raisins, cinnamon and stevia into a bowl and mix by hand.
3. Lay out a sheet of the filo pastry and lightly spray it with the cooking oil. Lay another sheet on top and repeat this process until you have used all of the 6 filo pastry sheets.
4. Arrange the apple mixture lengthways evenly along the centre of the pastry to within 2-3cm of each edge. Fold the two shorter edges over the filling and then roll the sheets up to form a log shape.

1. Place the apple in a microwavable bowl, and stir in the cinnamon, sweetener and water. Cover with cling film and cook on high for a couple of minutes or until it starts to soften, but still has a bit of a bite.
2. Remove the apple, drain off any excess water and measure out 60g (half a cup) of cooked apple (save the rest for another day!).
3. Mix the mincemeat with the apple and set aside.
4. Take the wrap and fold it into 3 equal sections. Press firmly so you can see the marks when you unfold it.

6. Make the filling. In a large skillet heat ghee and extra virgin olive oil. Add the sliced apples, brown sugar, cinnamon, nutmeg, cardamom and orange juice. Cook over medium heat, stirring as needed, for about2 minutes or so (you are not looking to cook the apples all the way, just a little bit to allow some juice to release.) Stir in walnuts and raisins. Remove from heat and set aside briefly.
7. Prepare a large sheet pan lined with parchment paper. Pour the juices from the apple filling in a small bowl and mix with a little more extra virgin olive oil (you'll use this mixture to brush the phyllo sheets).
8. Lay 10 to 12 sheets of phyllo flat on a clean surface (you can cover with a clean towel to keep the phyllo from drying, although this should be a quick process.)
