Mix together all the ingredients for your filling, take the crust out of the freezer, add the blueberries in the middle and fold in the edges to shape into a galette. If there are any cracks simply press them together with your fingers. Place in the freezer for 15 minutes, brush with egg wash and bake for 25-30 minutes until fully golden.
Fold the edges of the dough over the berries and pleat it every few inches. Whisk egg and water together. Brush the border of the galette with the egg wash and sprinkle with turbinado sugar. Bake in the preheated oven until crust is deep golden and juices are bubbling, 25 to 30 minutes. Check the underside of the galette is also browned.
