1. Generously salt and pepper your tenderloin. In a large skillet over medium high heat add the olive oil. Sear the tenderloin on each side foe about 2-3 minutes until it gets a golden brown crust. Remove from the heat and set aside.
2. In a food processor, add the mushrooms, garlic, and onion. Pulse in the food processor until it becomes a puree. Heat your skillet to medium high and add the mixture. Sauté the mushrooms until you have the moisture has left. Remove from heat and let cool.
3. Roll out some plastic wrap and lay the prosciutto so they are even and overlap. Spread the mushroom mixture on top leaving an inch boarder from the sides. Rub the mustard on the tenderloin and then roll the tenderloin up in the prosciutto and mushroom mixture folding up the sides around the tenderloin as you roll. Wrap the plastic wrap tightly around the beef and refrigerated for 30 minutes.
4. Bake until the pastry is golden and the beef registers to 120 degrees for medium rare. About 45 minutes. Remove the from the oven and let rest for 10 minutes before slicing.

1. Thirty minutes before you begin cooking, take beef out of fridge and allow to come to room temperature. Preheat oven to 400F.
2. Cut puff pastry into four squares. Using a paring knife, score a 1/2-inch border around each square. Place on a parchment-lined baking sheet (or lightly spray your pan) and refrigerate until ready to bake.
3. Heat heavy stainless steel skillet (anything but non-stick) over high heat. Season both sides of beef with kosher salt and freshly ground black pepper. Add 1 T oil; when it shimmers add beef (make sure to leave space between filets; never crowd your pan). Leave it alone! Don’t poke or prod it – just let it do its thing. If you try to flip it and it’s still stuck to the pan, it’s not ready. Once it releases on its own, flip and brown the other side.
4. When both sides are seared well and have a nice brown crust, place the skillet into the preheated oven. Cook for approximately 8 minutes for med-rare; 10 minutes for medium. Remove from oven, then remove beef from skillet. Let rest for 10 minutes.
