Christmas Eve in our home has always been the more formal meal we celebrate over the two day Holiday celebration. Rinse and pat dry the beef tenderloin. Combine the 2 1/4 teaspoons of the Kosher salt, 1 teaspoon of the black pepper, and the baking soda and stir together. Liberally coat the roast all over including the ends with the seasoning.
Preheat oven to 275 degrees F. Line a baking sheet with foil and coat with nonstick spray. In a small bowl, combine garlic, rosemary, thyme, 1 tablespoon salt and 1 tablespoon pepper.
