    4. Blend the sauce. Turn off the cooker. Using a slotted spoon, transfer the chiles, onion, garlic, tomatoes, and ginger to a blender. Add 2 cups of the cooking liquid, the remaining 1 teaspoon kosher salt, 1/4 cup apple cider vinegar, 1 teaspoon black peppercorns, 1 teaspoon Mexican oregano, 1 teaspoon cumin seeds, 1/4 teaspoon ground cinnamon, and 1/4 teaspoon ground cloves.
