1. Heat oil in your casserole dish over a medium to high heat and brown the sausages - you don't need to fully cook them at this point, you just want some colour on the skins.
2. Take out the sausages and set aside on a plate, turn the heat down to medium then add the onion to the pan and cook for about 5 minutes until soft but not browned.
3. Add in the garlic and carrots and cook for another 2 minutes, then add in the tomato paste, bay and thyme leaves.
4. Pour in the tinned tomatoes and stock and bring to the boil, then return the sausages to the pan.

1. In a large shallow pan heat up 2 tablespoons of oil and fry the sausages with the bay leaf, allspice and juniper berries for about 5 minutes turning often until the sausages are lightly browned. Remove the sausages from the pan and set aside.
2. Add the onions, garlic, celery, carrots and thyme into the pan and continue cooking for 3 more minutes stirring often (add a little oil if needed). Pour in the wine and cook for another minute.
3. Return the sausages to the pan, add the tomatoes, beans (along with the bean water) and stock. Drizzle over the Worcestershire sauce, sprinkle the onion granules and pepper to taste, give a gentle stir, cover and simmer for about 25 minutes stirring occasionally. After about 15 minutes remove the lid to allow the sauce to thicken.
4. Stir in the spinach and cook for another minute. Remove from the heat, adjust the seasoning if needed and enjoy!

2. Add chopped onions and garlic to the remaining oil in the pan and sauté until soft, fragrant and almost caramelised.
3. Return the sausages to the pan, pour the baked beans all over it, add Worcestershire sauce, smoked paprika, salt and pepper and stir to combine. You can add about ½ cup of low sodium vegetable stock or water if you would be leaving the casserole to cook for longer than 15 minutes
4. Reduce the heat and simmer for 15 minutes on low heat. Stir in chopped coriander, parsley or cilantro. Note: high heat would burn the casserole so do keep an eye.
