Add the water - Pour the water into the well then slowly incorporate the semolina into the water using a fork (photos 2 & 3). Knead the dough - Once a rough dough has formed, use your hands to knead the dough until smooth and elastic (photos 4-7).
I prefer pasta made with semolina flour to the regular “00” pasta flour, in terms of both texture and taste. Semolina flour comes from durum wheat, and it is made by removing and purifying the coarse centers of the grain. You can also find semolina-type flour made from rice or corn.
Sheeting the Semolina Pasta Dough by hand is also quite possible. I recommend following the same steps as when sheeting the pasta dough with a machine (folding, and shaping into a rectangle). However, instead of using the machine, simply continue to roll the dough with a rolling pin.
