I did increase each of the spices to almost double, and added cardamon, nutmeg and allspice as well. Used the full amt of Baking soda and other ingredients. I doubled the recipe and got 100 cookies. Had to count them quick though a bunch has already gone!;-) Could have made them a tad smaller to get the full amount indicated in the recipe.

This recipe even nuked fairly well for lunch at work the next day, though I wouldn't try to push it any longer than that. I'd suggest 10 ounces worth of tomatoes as only 1 or two servings' worth though, unless you're a light eater or accustomed to vegan or vegetarian cooking.

I made this recipe pretty much as is except that I used 3/4 cup of sugar for the batter and used 1/3 c of milk instead. I agree with the reviewers who say that this recipe could definitely benefit from less sugar in the batter. Honestly, the sugar used for the blackberry topping is just enough to make up for the sugar you can cut from the batter.

That’s why I’m writing this. The concept of roasting is so simple, it’s not really a recipe, but the taste that this vegetable yields . . . it’s at the top of the list of any vegetable I’ve ever had. 9.26.21 One issue I had with this recipe was the amount of arrowroot. It’s simply not enough to thicken this into a sauce. I ended up adding close to triple the amount of arrowroot called for in the recipe. It certainly does need a fair amount of salt and pepper, and I added more red wine to boost the flavor.

Stick with the other reviewers tips and us 2 teaspoons of McCormick's Pumkin spice instead of ginger and nutmeg, I also added one teaspoon of cinnamon and warmed up the spices and pumkin on the stove on low heat, cooling than adding the eggs and sweetened milk, it really made the spices meld together great like the other reviewer said to do.
