DirectionsStep1First, flatten the steaks to about 1⁄3-inch thick with the use of a rolling pin or a mallet.Step2Slice the steaks into 1⁄5-inch strips, and if there are any long ones, cut them in half and make sure to discard the excess fat. Season the beef with a pinch of salt and pepper.Step3Heat 1 tablespoon of oil in a large skillet set over high heat. Add half of the beef to the skillet and spread it out in an even layer.Step4Let the beef cook for about 30 seconds untouched until browned, then turn it and cook it untouched for another 30 seconds until browned.Step5Remove the beef to a plate. Don’t worry if you see a few pink bits.Step6Add the remaining tablespoon of oil to the skillet and repeat the above steps with the remaining beef.Step7Turn the heat down to medium-high. Add the butter and heat until melted. Add the onions and cook them for 1 minute; then, add the mushrooms and cook them until they are golden.Step8After that scrape the bottom of the frying pan to get all the golden bits off. Add the flour and cook while stirring for about 1 minute.Step9At this point, add half the broth while stirring, and once incorporated, add the remaining broth.Step10Stir in the sour cream and mustard until combined. Don’t worry if it looks split as the sour cream will melt as it heats.Step11Bring the mixture to a simmer; then, reduce the heat to medium-low. Once the stroganoff sauce thickens to the consistency of pouring cream (it should take about 3 to 5 minutes), you can adjust the salt and pepper to taste.Step12Add the beef to the sauce along with its juices and simmer for 1 minute; remove from the stove immediately.Step13Serve the stroganoff over pasta or egg noodles, garnished with chives if desiredIngredientsIngredients1 ⅕ poundsEye (boneless rib, Scotch fillet)add Salt And Pepper2 tablespoonsVegetable Oil (divided)3 tablespoonsButter1 Large Onion (sliced)10 ouncesMushrooms (sliced)2 tablespoonsAll-Purpose Flour2 cupsBeef Broth (preferably salt reduced)⅔ cupSour Cream1 tablespoonDijon Mustard8 ouncesEgg Noodles Of Choice (or pasta)add Chives (chopped, for garnish, optional)See moreNutritionalNutritional785 Calories22 gTotal Fat163 mgCholesterol40 gCarbohydrate931 mgSodium44 gProteinFrom halfscratched.comRecipeDirectionsIngredientsNutritionalExplore furtherThe Best Beef Stroganoff Recipe - Food Network Kitchenfoodnetwork.comIna Garten Beef Stroganoff - Recipes - Cooks.comcooks.comOld Fashioned Beef Stroganoff - The Stay At Home Chefthestayathomechef.comEasy Homemade Beef Stroganoff Recipe - Paula Deenpauladeen.comClassic Beef Stroganoff Recipe - BettyCrocker.combettycrocker.comRecommended to you based on what's popular • Feedback

    1. Using a sharp knife, slice steak very thinly and season lightly with salt and black pepper. Spray deep pan or skillet with olive oil spray and turn stove heat on medium-high. Add steak slices to skillet and sear on each side for approx 1-2 minutes on each side. Remove steak from pan and turn heat down to medium.
    2. Add veg oil spray, mushrooms, sliced onion, garlic and flour to pan and stir to combine. Cook for approx 5 minutes until mushrooms are slightly tender.
    3. In a medium bowl, add sour cream. Gradually whisk the milk into the sour cream to avoid the mixture separating. Stir in Worcestershire sauce and dijon mustard. Add the sour cream mixture to the skillet and stir in with the mushrooms and onions. Gradually add in the beef stock and continue to stir until fully combined. Turn heat down to medium-low and simmer for approx 5 minutes.
    4. Add in the steak slices and continue to simmer for 10 minutes. Add salt and pepper and season to desired taste. Meanwhile, add pasta to pot of boiling water and cook until tender. Drain and set aside. Once stroganoff sauce is done simmering, remove from heat and serve over pasta. Enjoy!
