So Bo Kho is often served either with French Bread (Bánh Mì Bò Kho), Rice Noodles (Phở Bò Kho), Vermicelli Noodles (Hủ Tiếu Bò Kho) or Rice. Bo Kho is usually simmered for at least a few hours to create the rich depths of sweet-savory-umami flavors & fragrance and fall-apart tender beef. Like most stews, Bo Kho is even more flavorful the next day.
And, indeed, Bo Kho is flavored with chili, five-spice, fish sauce, lemongrass, plenty of garlic, and tomato. Its familiar red color comes from the addition of fragrant annatto, which imparts a distinctive red color!
This technique (kho) has the advantage of tenderizing the meat and making the vegetables very soft. The broth of the bò kho brings very rich flavors: lemongrass, star anise, cinnamon, cloves, black pepper, garlic, ginger, cumin, coriander, Sichuan pepper, paprika and chili pepper.
