1. Start with raw, unfrozen shrimp. Remove veins, shells and tails.
2. In a small bowl, add ¼ cup of egg white (or 2 eggs, mixed) and on a small plate combine the coating (coconut flour, onion powder, salt and pepper).
3. Spray the bottom of your air fryer with a non-stick spray and bring the tray over to your workspace.
4. Now start by taking a shrimp, dip it in the egg, then coat it in the coconut mixture. Once coated, add it to the bottom of the Air Fryer Tray. Keep doing this until all shrimps are done, but make sure they aren’t touching in the air fryer. It’s better to cook two batches than over stuff the fryer.
