1. In a high-speed blender or food processor, add rolled oats and blend until flour-like consistency. Gently shake the blender loosen up the blended oats.
2. Add in the bananas, milk, cinnamon, and baking powder. Blend again for 20 – 30 seconds, until smooth batter. Transfer into a bowl and let the batter sit for 8 – 10 minutes.
3. Preheat waffle maker and grease with non stick spray. Once hot, pour batter into it and cook until center is cooked and the edges are crispy. The amount of batter depends on the size of your waffle maker. Repeat until you’ve used all your batter.
4. Top with chocolate chips, fruit, more banana, whipped cream, and/or maple syrup or honey, and enjoy!
