Add eggs and vanilla and stir to combine. Add buttermilk and stir.Step5In a separate bowl, add baking powder, baking soda, and flour and stir by hand until the dry ingredients just come together and there are no lumps.Step6To the banana mixture, add the flour mixture gradually and stir until smooth.Step7Spoon batter evenly into the 12 muffin openings in the tin. They should be about 3/4 of the way up each opening.Step8In a new small bowl combine the streusel topping ingredients and mix by hand or with two forks to combine. It should be like a coarse sand consistency with some butter lumps.Step9Divide the streusel topping evenly over the 12 muffins.Step10Bake for 8 minutes at 425°.Step11Immediately drop the oven temperature to 350° (do not open the oven or rotate the muffin tin) and bake for another 7 minutes.Step12Check to be sure the muffins are ready with a toothpick. It should come out clean when passed through the center of a muffin.     1. For the muffins, beat butter with sugar for about 3 minutes. Add eggs and vanilla, beat until combined. Add bananas, beating until combined (you can mash before, or toss them in whole and let them mash in the mixer). Add flour, baking soda, baking powder and salt until blended. Beat in buttermilk, fold in walnuts.
    2. Spray cupcake tin with baking spray. Batter will fill about 18 muffins.
    3. In a small bowl, mix streusel topping ingredients together. I use my hands to combine the butter with the remaining ingredients until crumbly. Divide topping evenly over muffins (about 1 Tbsp each).
    4. Bake muffins in a 350 degree oven for about 15-18 minutes. Remove and cool completely before applying glaze.

    1. Place your soft (overripe) bananas in a bowl and using a fork, mash the bananas until soft and chunky, doesn't need to be real smooth. (see notes on bananas)
    2. Preheat oven to 350° (325° for dark non-stick style pans) and spray your pans with non-stick spray or oil. In a medium mixing bowl, measure oat, unbleached, and graham flours, add baking soda and sea salt whisking until combined. In the bowl of a stand (or handheld) mixer fitted with the paddle attachment, cream your butter on medium-high speed for 1 minute, until light and creamy. Scrape sides if needed. Add natural cane sugar and honey, cream again until sugar and honey are combined well with butter and mix for 1-2 minutes on medium.
    3. Lightly beat eggs in a small bowl. With mixer on low add in mashed bananas along with the eggs and mix until combined, about a minute, scrape sides of bowl. Add vanilla and mix. With mixer on low, slowly pour in the flour mixture and mix only until combined. If using nuts and/or raisins, mix in now. Scrape sides. Pour cream (milk or buttermilk) mixing on low just until combined. Using a large scoop, fill prepared (lined and sprayed) muffin cups about 2/3 full.
    4. If desired sprinkle with a little demerara sugar and cinnamon or make streusel...below.
