2. In a medium bowl combine the first 3 dry ingredients and stir until combined.
3. Add the banana, vanilla, and optional maple syrup and stir until combined. Stir in chocolate chips.
4. Drop spoonfuls of dough onto pepared baking sheet and flatten into desired thickness (they do not spread in the oven). Bake in preheated oven for about 13-15 minutes or until the bottoms are golden brown and the tops of the cookies no longer appear wet.

2. Add the bananas to a food processor or blender and blend until the bananas are smooth. Add the almond flour and baking powder then blend again.
3. Transfer the batter to the baking sheet by scooping out one large tablespoon (I use a cookie scoop for this) of the batter and using your fingers to form into a cookie. Add 3-4 chocolate chips on top and press them into the batter.
4. Bake the cookies 15-16 minutes or until golden brown around the edges. Remove from the oven and cool on the pan 5 minutes before removing and enjoying.
