If you have extra cranberries left over, use them to make sugar-free dried cranberries.
You will hear the cranberries popping as they cook down and the sauce begins to thicken. Reduce the heat to medium. Add the brown sugar, granulated sugar, cinnamon, nutmeg and Stevia, if using. Mix well, and stir often. As the sauce thickens, you do not want to burn the sugars.
First, wash the cranberries, discarding any bad ones, then place them in a medium saucepan with sweetener and 1 cup of water. Bring the water to a boil, then reduce the heat to medium. Stir and simmer the cranberries until they burst, about 10 minutes. Then mash the cranberries slightly with a spoon and remove them from heat.
Take a quarter of the cranberry pulp, put in a small bowl. Whisk in the pectin powder all at once and then either the sugar or liquid stevia or honey, set aside. Add the calcium water into the pot with the rest of the cranberry; stir well. Put pot back on stove, and bring the mixture to a full boil.
