1. In a large mixing bowl, mix together vital wheat gluten, salt, garlic and onion powder, smoked paprika and nutritional yeast.
2. Add the tahini and broth and stir until you make a ball.
3. Knead the ball for 3-5 minutes. The longer you knead, the more chewy and dense it will get. Cut the dough into four even pieces and let it rest while your broth comes to a boil.
4. Get a large soup pot on the stove and add all of the ingredients from the "simmering broth" section. Bring to a boil then turn down to a high simmer. Add in the seitan pieces.

Mix on medium-low until elastic, about 3 minutes (or knead by hand in the bowl until elastic, 3 to 5 minutes), adding more broth if the dough is too dry. Shape into two 3-by-5-inch loaves.
2. Transfer the loaves to a large saucepan. Add the remaining broth, ginger and enough water to cover the loaves; bring to a boil over medium-high heat. Reduce heat to medium-low, cover and cook until firm, about 30 minutes. Remove from heat, uncover and let stand for 15 minutes. Transfer to a colander to cool.
