2. Mix together the potatoes, onions, and garlic in a medium mixing bowl. Next, in a large mixing bowl, stir together the flour, baking powder, eggs and salt. .
3. Now add the contents of the first bowl to the second bowl and mix together. You can do this using your hands if needed. To make the pancakes, use about 2-3 tablespoon size balls of batter. Flatten this to about 1/4-1/2″ in thickness between your hands and then place it onto the prepped pan. Repeat until your pancakes are formed.
4. Bake for 15 minutes, flip over, and then bake for 10-15 minutes or until browned. Serve with applesauce and/or sour cream to make this even more authentic!
