Keto Butterflied Chicken with Garlic Spinach

Reviews: 6Servings: 4Cuisine: AmericanCategory: Dinner1. Preheat oven to 450 degrees F. Butterfly chicken by removing backbone and then laying flat, breast side up. Put chicken onto a rimmed sheet pan and tuck in the wings under the bird so they don’t burn while baking.
    2. Place minced garlic onto a cutting board and mince even finer until you can use the flat edge of a knife to make into a chunky paste. Combine that in a small bowl with the ghee and the rest of the spices except lemon juice
    3. Rub mixture all over entire chicken and under the skin on breasts and thighs. Reserve 1-2 tablespoons of mixture and set aside.
    4. Bake chicken for 15 minutes and remove from the oven. Reduce the heat to 400 degrees F. and place potatoes around the chicken. Sprinkle the potatoes with a pinch of salt.

Cut along the other side of the backbone, completely removing about about 1 inch wide portion of the spine. Turn the chicken over and use your hands to press down firmly, flattening the chicken until you hear the crack of the breastbone. Optionally, you can tuck the wings.
    6. Lay the butterflied chicken on a parchment or foil lined sheet pan. Pat it dry with a few paper towels, then rub it all over with 2 Tablespoons of oil and seasonings, using your fingers to rub it under the skin too. Let the chicken marinate in the seasonings for at least 30 minutes, but you can marinate the chicken for up to 24 hours in the refrigerator.
    7. Preheat the oven to 450 degrees Fahrenheit. Meanwhile, wash the vegetables. Remove the large stems from the Brussels sprouts and cut into halves. Cut the potatoes into quarters. Cut the lemon into quarters. Transfer the vegetables to a bowl, and toss with the remaining oil and season them lightly with salt and pepper. Spread the vegetables and lemon pieces on the sheet pan.
    8. Set the sheet pan in the oven and roast for 40 minutes, using a meat thermometer to test the internal temperature has reached 165 F at the thickest part of the thigh. Allow the chicken to rest for about 5 minutes before slicing.

    10. Rinse the brine from the chicken, then pat dry.
    11. Preheat the oven to 450 degrees F (232 degrees C).
    12. Place the chicken into a baking dish large enough for the pieces to fit without touching, or just barely touching. Brush both sides with olive oil. Sprinkle both sides with Italian seasoning, garlic powder, sea salt, paprika, and black pepper.
