This mango salsa recipe uses just 5 ingredients: mango, red bell pepper, red onion, cilantro and fresh lime juice. It’s a small batch and makes about 5 and a half servings – each serving is 1/2 cup.
Season with salt and a light spritz of fresh lime, then cut into 6 or 8 wedges. Place on a parchment paper lined baking sheet and bake for 4-5 minutes at 400 degrees F. Be sure to keep an eye on them, or they could easily burn. Store in an airtight container and enjoy with your mango salsa!
Peel the skin off the mango and onion. Slice the lime in half, crosswise, and set aside. Chop the mango, bell pepper and onion into ¼-inch pieces. Put them into a bowl. Finely chop the cilantro and add it to the bowl. Squeeze the juice from the lime into the bowl. Stir all ingredients together well.
This homemade mango salsa tastes best the day it is made within 24 hours. If you happen to have any leftover mango salsa, it should be stored in an airtight container in the fridge.
