1. Make a slit into eggplants, but not cutting them into half. If you are using Japanese eggplant slice them in 8 long pieces.
2. Heat the oil in flat frying pan over low medium heat and stir-fry eggplant rotating occasionally till they are tender not mushy. Set them aside.
3. For the spice mix take all the ingredients, cumin seeds, fenugreek seeds, coriander seeds, cashews, sesame seeds, coconut powder and grind them in fine powder. Set aside.
4. Blend tomatoes and ginger together to make into fine puree. Set aside.

1. Rinse eggplants well under running water and wipe dry with a kitchen tissue. Make 4 slits on the brinjal and push 4 garlic cloves deep inside 2 slits. Also push 2 slit green chilies in the other 2 slits. Brush them with oil.
2. On Direct Fire: With the help of a tong, place it on direct fire. You can do it either on the red hot coal or stovetop. Keep turning it to all the other sides and grill until it is done completely roasted. It takes about 12 to 14 mins.
3. Pour oil to a hot pan. When the oil turns hot, add chopped ginger and garlic.

1. Roasting the eggplants on a grill or stovetop: Make slits all over the eggplant skin and insert the crushed garlic inside each until it's firmly embedded. Using a pair of tongs, carefully roast the eggplant on each side until the skin is charred and a knife inserted in the thickest part goes cleanly through.Roasting the eggplants in the oven: Preheat the oven to 400 degrees. Cut each eggplant into half lengthwise. Make slits in the flesh portion of each half and insert a garlic clove in each. Place cut side down on a foil-lined pan and bake for 30 minutes or until a knife inserted in the thickest part of the eggplant goes cleanly through.
2. When the eggplants are cool enough to handle, peel off the charred skin if you roasted them over an open fire, or, if you baked them, scoop out the flesh with a spoon. Chop roughly. You can also mash the eggplant or blitz it, but I prefer chopping for the best flavor. Set the eggplant aside.
3. In a saucepan, heat the oil and add the cumin. Let the cumin darken slightly and then add the onions, green chili peppers if using, and half the cilantro. Season with some salt. Saute over medium heat until the onions soften and start to brown.
4. Add the ginger, coriander powder, cayenne and turmeric. Mix well to toast the spices, for about a minute. Then add in the tomatoes. Mix, and let them cook another five minutes or so until pulpy. You don't want to cook them for too long.
