Bacon onion jam is certainly not what comes to mind. Traditional bacon jam recipes are made by slow cooking the bacon and the onions with vinegar, brown sugar and spices, and then putting then ingredients in a food processor to make sort of a relish. Put the bacon in the skillet and cook until it is crisp. Using a slotted spoon, remove the bacon from the pan and set aside; leaving half of the drippings in the pan. Reduce the heat to medium-low. To the bacon drippings, add the butter, onion, thyme, black pepper, and cayenne.
Cook your bacon in a skillet. When done, take out the bacon to cool and put the onions in the skillet with the bacon grease. Cook the onions until caramelized about 10-15 minutes. In the meantime chop up your bacon and set aside. Chop up your tomatoes and sprinkle with salt and pepper and let sit.
